How do I tell the app which days my child's school is open?

On your child's page, choose the days of the week their school runs; days it is closed are never counted.

Monday to Friday is assumed until you change it. Many schools run Sunday to Thursday, or have a short Friday. The app only notices school going quiet on days the school is actually open.
